This was at 8 weeks! For anyone who does not know celiac disease is an immune reaction to wheat, rye, barley and malt. I have had this since I was 16 years old. I also have scoliosis which also makes me high risk. Celiac disease only effect the baby in having a low birth rate or having premature labor. But that is only if you do not fallow a gluten free diet which I have fallowed since I was 16. Scoliosis effects me in back pain and can effect me receiving an epidural. On the far left, it was a few weeks after quitting a narcotics addiction. Withdrawal was rough, did it cold turkey, and I had stomach aches everyday. I tried to rebuild myself and then ended up the me in the middle, with more stomach aches and swelling until I found out I had celiac and more allergies. Now I've lost the weight and perhaps gained my weight back in ink. 😂 I rechanneled all that energy into art, cooking, and caring for my fam.
After all that’s happened—we are back to chiari malformation. My new neurologist in NYC ordered some MRIs I hadn’t had before. She let us know that she saw some movement/instability in my neck and my tonsils were hanging low (chiari) so she conferred with her specialist at Cornell Chiari-care. Dr. Greenfield let her know that my chiari was definitely “not mild” and likely is explaining most of my neurological symptoms. We will be returning to NYC to see him and likely have a decompression surgery of some sort. First we need to have a CCI specialist look at my upright MRI to determine if I have CCI, because if I do, the decompression would not work long term and I’d likely have to have an even more major surgery. I’m really hoping that I don’t have CCI, but overall I’m just thankful for hope and answers. #onedayatatime#chiarimalformation#wegotdys

🇬🇧Gluten free lasagne with minced meat /🇨🇿 Bezlepkové lasagne s mletým masem 🍅

250g bezlepkových lasagní / GF lasagne @feliciaglutenfree
0,5 kg mletého masa/minced meat
660ml rajčatové passaty/tomato passata
200g eidamu / eidam cheese
1 cibule /onion
sůl, pepř, česnek, tymián, bazalka,olivový olej/salt, pepper,thyme, basil, olive oil 🇨🇿
Lasagne uvaříme v osolené vodě. Na pánvi si osmažíme nakrájenou cibuli a mleté maso, které opepříme, osolíme a okořeníme. Poté zalijeme passatou a zahustíme nastrouhaným sýrem.
Zapékací mísu vytřeme olivovým olejem. Na dno položíme plátky lasagní, poté na ně dáme směs masa a omáčky, zasypeme syrem a priklopime další vrstvou lasagní. Poté co je miska zaplněna, vložíme ji do trouby a pečeme na 180°C asi 30 - 40 minut. 🇬🇧
Lasagne cook in salted water. In the pan, fry the chopped onion and minced meat, pepper, salve and season. Then pour the passata and sprinkle with cheese.
Baking dish smear with olive oil. Place the lasagna slices on the bottom, then add a mixture of meat and sauce, sprinkle with cheese and cover with another lasagna layer. Once the bowl is full, put it in the oven and bake at 180 ° C for about 30 - 40 minutes.
I’m “Indulging” in gluten for the next couple of weeks for an upcoming endoscopy I have to get. Indulging is in quotes because I feel bloated and scatter brained and all around not great. I went with my dad the other week to Ingebretsen’s where he bought 25 pounds of Swedish meatball mix for a church luncheon. I saw the Swedish potato sausage and bought one to see why so many people were buying them for Christmas. I think that I might like these better than Swedish Meatballs. The German in me had to make some homemade gluten free spaetzle to go with it.

Growing up with Crohn’s from being diagnosed at age 17 to age 27 now, I’ve had constant battles with sickness, 8 anti inflammatory pills per day, two surgeries, and many trips to the hospital. The craziest part: I’m not alone. But I felt alone. I had no community of any kind. My question for you all is do you currently have any friends you talk to or spend time with regularly in your life that also have Crohn’s or a similar issue? Do you make your own milk? I’ve been making mine for nearly a year now. While I have purchased ready-made nut milks from the store in a pinch, here is why I don’t make it a habit:
🥛 - Gums . There are many types of gums out there and they are all mostly used as thickening agents. If you have gut issues — STAY AWAY. Guar gum can cause increased gas, bloating, diarrhea, and loose stools. Xanthan gum can swell the intestines which can cause symptoms associated with IBS. It has been shown by studies that locust bean gum may compromise the absorption of nutrients like iron, calcium, and zinc.
- Carrageenan. I stay away from this ingredient at all costs. It has been attributed to ulceration and inflammation. It is used as a thickening agent but has no nutritional benefits.
- Sugar. If you suffer from any kind of chronic gut distress and inflammation you have to cut sugar out.
My favorite nut milk to make is a mix of almonds and cashews. The cashews make the milk slightly thicker (not by much admittedly) but as a girl who used to only drink whole milk, I appreciate it.
My husband has made one this year and I'm quit impressed ❤️❤️❤️❤️

Went to a big family Christmas brunch today. I brought my own food—Bob’s Red Mill gf pancakes, made vegan, and all the low FODMAP fruit. My husband bought me a non-hazelnut chocolate peanut butter, which really added something to the pancakes. For dinner, I made a @glutenfreegirl recipe for pork congee, which was excellent.
