Lunching on my favorite easy stir fry combo - broccoli, bell pepper, shiitakes, garlic, ginger, tamari, and sriracha with your choice of protein. Today I went with chopped cashews and served it over farro with some avocado slices. Highly recommend 👌😋
These are my current favorite non-dairy “cheese” sauces. I love to make spaghetti squash (in the instant pot of course...just put the whole damn thing on the little rack with a cup of water in the pot and set for 30-40 minutes depending on the size)...no need to stab or cut the squash...see my story highlights for the play by play) and then mix it with some cut up organic rotisserie chicken, one of these incredible sauces, and top it with some fresh avocado and diced tomato. OMG! 😋

One of my good friends Irina shared this caesar salad dressing recipe with me a few years ago, and no lie, I make it at least 3 times per week. It's that addicting!! Here's the simple recipe⬇️
1 cup Mayonnaise
3 Garlic Cloves
Juice of a half of Lemon
1 teaspoon Dijon Mustard
1 teaspoon Worcestershire Sauce
1/2 cups Parmesan Cheese (buy the good quality by the deli)
Put all the ingredients in a high power blender to blend. I use my nutribullet. That's it!! This dressing reminds me of the Caesar dressing from #cheesecakeFactory! If you decide to try this recipe, make sure to let me know how much you love it!!

It’s been a while since I last made my goodies and I’m so into it!✨ Just made rich and decadent brownie skillet recipe and honestly it’s extremely satisfying.😍 It’s chewy, chocolatey and gooey in the middle! As you know I don’t count calories because I tend to focus on how nutritious and beneficial the ingredients are and, of course, how good it tastes...So this is probably one of my shots I just made!💫🙊

Gluten Free Buffalo Chicken Tenders
$5 per serving (3 tenders + dip)
Recipe makes 4 servings
1.5 lb chicken breast tenders
1 cup almond flour
1/4 cup coconut flour
2 tsp garlic powder
2 tsp onion powder
1/2 tsp salt
1/2 tsp ground pepper
1/2 tsp cayenne (adjust for desired spice)
2 Tbsp olive oil
2/3 cup Frank’s redhot cayenne sauce
1/3 cup melted butter
1/2 cup chunky blue cheese dressing (try the preservative free brands near the packaged salads, I like Bolthouse)
Whisk together cayenne sauce and melted butter, set aside. Pat chicken dry with paper towels. Whisk eggs in a shallow dish. Combine flours and spices in another shallow dish. In a large flat pan, heat oil over medium high. Assemble strips by dipping each tender in egg wash then flour then place into heating pan. Cover pan and cook 6 minutes, flip each strip and cook uncovered an additional 6 minutes. “Breading” should be getting brown and crispy. Remove strips from pan and brush with cayenne-butter sauce. Serve immediately with side of blue cheese (or ranch) dressing. Don’t forget to add something green to your plate!

We are always hearing to invest now financially for when we retire. We need to put money away so we live comfortably later, a great principal.
I believe we need to apply that principal to our health. Yes you can invest now in looking good at the beach, but healthy habits now are also investing in yourself when you grow old. None of us can fight getting older, but we can fight against growing old and feeling old. We can also put ourselves in the best situation in order to avoid as many illnesses as we can. Invest in your health now, so your health is not a problem in the future.

7-Eleven/7-Select Spicy Cheese Poofy Puffs with a very cool curly guy on the bag. 🤪 These are a small cheesy corn snack with a texture in between a puff and a curl.. a poof 🤣 Really liked the savory cheese flavor but if you’re looking for heat it’s not here. These are just barely spicy with paprika being the source. Just a nice cheesy slightly spicy poofy snack. I like em. This is something that I am guilty of as well... As a student athlete, I constantly grab quick food and snacks that are not healthiest options between class and practice. •
Overnight oats have been a go-to for me lately. I have been making them a day or two before and storing them in the fridge to grab for breakfast or lunch on the go!
3/4 cup oats
3/4 cup almond milk
1/2 tbsp cocao powder
1 tbsp flax seeds
1 tbsp chia seeds
1/2 tbsp vegan chocolate chips
2 drops of stevia clear
Topped with: raspberries & cashew butter •
They come out so creamy and delicious and you can make so many different variations!!

Made this sweet potato toast in the air fryer and it was the bomb 💣! Topped one with egg salad and the other with avocado, sprinkled with @traderjoeslist EBTB seasoning 🙌🏾. The best lunch of my #whole30 thus far 👍🏾!!

Creamy Beet Hummus
✨1 can low sodium chickpeas cooked (drain, add to saucepan, cover with water and add 1/2 tsp. baking soda, bring to boil, cook 10 min or until mushy, strain)
✨2 @lovebeets cooked beets
✨1/4 c. fresh lemon juice
✨1 1/2 tsp. chopped garlic
✨3/4 tsp. fine sea salt
✨1/2 c. tahini
✨1/2 tsp. cumin
✨1 tbsp. olive oil
👉🏻Combine lemon juice, garlic, and sea salt. Let rest for 10 minutes. Add mixture to food processor with tahini, cumin, olive oil, beet, and chickpeas and process until smooth.

Blueberry Collagen Baked Oats
✨1/2 c. rolled oats
✨1 tbsp. @mammachia chia seeds
✨1/2 c. nut milk
✨1 scoop @vitalproteins collagen powder
✨1/2 mashed banana
✨1 tsp. baking powder
✨1 tsp. cinnamon
✨1 tsp. vanilla extract
✨1/4 c. bluebs
✨pinch of sea salt
👉🏻Preheat oven to 400 and grease ramekin. Mix all ingredients together and pour into ramekin. Bake 20-25 minutes. Top with @justins vanilla almond butter and extra bluebs💛

PRO TIP: If you freeze leftover pesto/pasta sauce in an ice cube tray, you can take out small portions whenever you’re craving it... Honestly, changed my life😅
