  • Creamy Zucchini + Potato Soup🌱 ➡️QUESTION: Are you still LOVING all the soups I've been sharing lately?! Or are you just completely over soup? Like, all souped out?!! 😂 Let me know because I really do listen to you, and try to create recipes you'll use a lot! 🙏🍜💖 { Sooo creamy and delicious! A brand NEW favorite wintertime soup! } makes 4 servings Ingredients: 1 Tbsp clarified butter or ghee, coconut oil, avocado oil, or olive oil  2 fresh garlic cloves, minced  1 large yellow onion, diced 3 stalks crisp celery, sliced 2 medium zucchini, chopped 2 medium potatoes, peeled and thinly sliced 4 cups low sodium chicken broth, or broth/stock of choice Garnish/finishing ideas: 2-4 strips of nitrate free bacon, cooked and crumbled (optional!). 1 cup plain Greek yogurt, unsweetened coconut milk, OR grassfed cream 1/4 cup shredded parmesan, to garnish sea salt and fresh ground black pepper, to taste Instructions: Melt butter/ghee in a medium pot over medium high heat.  Add garlic, onions, and celery, then sauté for 3-4 minutes until veggies begin to soften. Add zucchini, potatoes, broth and bring to a boil. Once boiling, cover and reduce the heat to a low simmer. Cook for 20 minutes or until veggies are fork tender. Taste and season with sea salt and fresh ground black pepper to your taste. Using an emersion blender, blend until smooth and creamy, then stir in the plain Greek yogurt. I chopped the eggplant and bell pepper and tossed in a small amount of EVOO, salt, pepper, garlic, and garam masala. Here's what infused the veggies w delicious flavor: I cooked the meatballs (same spicing as before) right on top of the veggies as they roasted. Threw everything in a cooking pan at 400 for 30min.   • This week on the blog we’re going full-on theoretical, looking at current theories about body weight and body weight regulation – both pros and cons (scientifically and in application). Currently, there are 3 big (and one small) theories on weight control. Here is what we can reasonably be sure is factual: 1. Leptin is a hormone that at some level auto-regulates our bodyweight 2. While we may have some direct control over our bodyweight in the short term, those auto-regulatory hormones seem to resist (and even actively work against) weight loss over the long term. 3. Different environmental/behavioral factors also can further disrupt these hormonal processes. And here my personal take-aways from the research: 1. I may or may not be able to entirely control my body weight. But if attempting to control my bodyweight may cause long-term disruption to my internal body processes, do I really want to do that? 2. I most certainly can control my own lifestyle choices (sleep, stress, etc), which affect the function of my bodily processes. If working on those helps my body to carry out its innate functions better, shouldn’t that be my focus over my weight? 3. My body has an auto-regulatory process for weight management, which outwardly manifests as hunger and appetite, and attempts to over-ride those cues (intentionally dieting) not only disconnect me from them, but ultimately may harm them over the long-term - what else in my health may be compromised as a result? Is that worth it? 4. If I honor external cues over my own body, am I setting up a trusting relationship between my mind and my body? What are the ramifications of that decision? I’m totally guilty ...   • Need a wholesome breakfast option on the go? I’ve got you covered! Getting in veggies can be hard, which is why sometimes you have to eat them in a muffin 🤷‍♀️ Which is A-okay in my world! Preferred, actually. RECIPE for these Chocolate Chip Zucchini Muffins is below!! You can make them #glutenfree by using certified gf oats if needed🙃 . . Ingredients: •2.5 cups rolled oats •3/4 milk of choice (I used almond) •1 tsp apple cider vinegar •1 Tbsp ground flax seeds •2 large eggs lightly beaten •2.5 cups shredded zucchini (press as much water out as you can) •3/4 cup coconut sugar •1/2 tsp almond extract •1/4 tsp salt •2 tsp cinnamon •2 tsp baking powder •1/2 tsp baking soda •1/4 cup dark chocolate chunks . 1. Preheat oven to 350F and line a 12 muffin tin with paper cups. 2. In a small bowl mix the milk, apple cider vinegar and ground flax seeds together. Let sit for 5 minutes then add in the eggs and whisk. 3. In a separate bowl, shred the zucchini, remove excess liquid from the zucchini by placing the shreds in paper towel and squeezing gently over the sink. Removing some liquid is important otherwise your muffins can be too wet! Add the zucchini in with the milk and egg mixture and stir. 4. Add in the coconut sugar, almond extract, and cinnamon. 5. Next, place oats in a blender and pulse on high until you receive a flour consistency, add in the baking powder, baking soda, and salt and pulse once or twice to blend together. Fold the oat flour mixture into the wet mixture (without over mixing or it can get a gummy texture). 6. Fold in the dark chocolate chunks. 7. Lastly, evenly divide the mixture amongst the 12 muffin cups and top with some rolled oats and chocolate chip or cacao nibs for an extra crunch (optional). 8. Bake for 40 minutes and enjoy! I love eating these slightly warm with some butter and a cup of coffee☕️

  • Dinner tonight was quick! @ninjakitchen air fryer meal! Sliced these baby colorful potatoes in half, seasoned them with parsley, garlic powder, oregano, salt and pepper and cooked them for 12min with 1tbs of avocado oil. The salmon was seasoned with a squeeze of lime, garlic pepper, a little pink salt and pepper, then drizzled with honey. It was done in 10minutes!   • Made another batch of sushi tonight, this time using sprouted brown rice (check out 📽 to right for how I made it). The sprouting process makes the grain easier to digest and makes nutrients more easily available to the body. ⠀ ⠀ Brown rice is a great “whole grain” and contains protein, fiber, B vitamins to support the nervous system, magnesium and many other nutrients. ⠀ ⠀ Did you know that many grains are refined meaning they’ve milled removing the hull, bran and germ which are nutrition super-houses. This podcast was a milestone in my life and I’m excited to be featured in more. ———————- Joe is one of those people you knew of but didn’t talk to in high school and started talking to after high school. Joe and I have a lot in common: we both hate shirts and like lifting. A lot of what I want to accomplish, he is already accomplishing.   • Favorite brain food: Salmon Best Salmon in AZ: @nelsons.meat.fish 🐟❤️ I haven’t had REALLY GOOD POKE since I living on Maui last year. I just can’t from most places especially being landlocked 😭. However, Nelson’s poke is too legit to quit. And now I can’t stop. Love you @nelsons.meat.fish !! Currently obsessing over these homemade poke bowls. Last weekend I made a ‘make your own poke bowl station’ for our @bachelorabc viewing party and it was a HIT! 🌹❤️ The toppings are endless and soooo easy to prep ahead. I love adding greens and cucumber so I am getting a healthy serving of fiber. It really is a perfectly balanced meal : FAT, FIBER, GREENS and PROTEIN ❤️🤤 YUMMMMMM!!! PS watch my insta stories to see what I did with the rest of the salmon I picked up earlier this week!!! K love ya!! 👍🏽❤️

  • COOKIE TIME! 🍪I’m assuming that you guys really want this cookie recipe since the vote from my stories was a unanimous “yes yes yes!!” 🙈 They’re vegan, gluten free, oil free and lightly sweetened with coconut sugar! 💁🏼‍♀️and most importantly, they’re SO good! . . Chocolate chip PB cookies: Ingredients: 1 C. Almond flour 3/4 C. Rolled oats 1/3 C. Coconut sugar 1 t. Baking powder 1/3 C. Dairy free chocolate chips 1/4 C. PB (I used @eatnuttzo) 1/2 t. Vanilla extract 1 flax egg 2 T. dairy free milk. . . Method: Pre heat oven to 350 F. Line baking sheet with parchment paper. Then, mix water and flax meal to make your egg, set aside. Next, add and mix all dry ingredients into a medium mixing bowl (including chocolate chips). Then, add all wet ingredients into a large mixing bowl and stir until well combined. Slowly add dry ingredients to your wet ingredients and stir to combine. Then set your dough in the fridge for AT LEAST 30 MINUTES or more! Once chilled, scoop 1-2 T. Of dough onto your lined baking sheet and press down into discs. Bake for 13 (ish) mins. Let them cool completely before removing from baking sheet. . . Enjoy!!🍪🍪🍪🍪🍪🍪🍪

  • DOUBLE TAP IF YOU LOVE RYE BREAD ❤️❤️❤️ My World Bread Award Winning 🥇Ryeless Rye gives you all the taste minus all the GLUE-ten. 🤔🤔🤔⁉️ HOW IS THAT POSSIBLE? ... you might be thinking. 😉😉😉 The secret is threefold. 1️⃣ The first most obvious way to get the #ryebread flavor is to add high quality caraway seeds to the mix. Caraway seeds give rye bread a lot of its flavor. 2️⃣ The second more obscure method to get this #glutenfreebread to taste like rye, lies in the long sourdough fermentation process. The flavors of the #buckwheat melding with the caraway in a long slow process brings out the sour and sweet in perfect proportions. 3️⃣ The last ingredient is love and care for the dough. It’s alive, and at least half water so good vibes are ohhh so important. ❤️💙💚🧡💛😊🙏🏼

  • The rumors are true. I quit whole 30 last night. Quit has such a negative connotation but in all honesty, I was ready. It’s not that the eating was hard or that I was starving or anything like that, I just was mentally and physically exhausted and preparing meals and saying no to things I really wanted just seemed to be such a chore. This makes me sound so weak minded but it’s the truth. So after my four hour (and successful) client meeting yesterday, I celebrated with a glass of wine and a burrito and you know what? I have no regrets. I learned a lot about my eating habits over my 15 days of whole 30. Most importantly I realized how much processed food and bread I was eating. And while I thought that I couldn’t live without it, I very much could! So while I’m not “whole30” anymore, I’m very much still on this food journey. I mean look at me! I ordered sushi without rice today! I’m a changed woman! #justreallyhungry

It contains frozen banana, frozen zucchini, frozen berries, dates, chia seeds, and spinach/ greens if I have any on hand. The frozen banana and zucchini helps make it nice and thick so it’s more like ice cream. The dates help sweeten it up a bit so you don’t taste the greens at all! Seriously to die for 💚

  • Have you ever noticed that 85% of what I eat is a mess of things out of a bowl 🙈🤷🏻‍♀️ This is another super quick week night recipe for all you busy bees out there. And it’s even vegan!! I’ll go through how I built my meal with macros in mind so hopefully it will help you learn how to build a balanced plate. I started with a base of chickpea and lentil pasta. I love this pasta because it’s much higher in protein and fibre than traditional pasta. If you’re lower on carbs feel free to substitute for zoodles. If you do this though you will need to add a protein source as a lot of my protein comes from the pasta. I added my cheesy tahini sauce for some added fat (I will post the recipe soon, I’m still perfecting it). Bonus it actually has protein too from the nutritional yeast! Added roast broccoli and brussel sprouts from the air frier for my veggies. This also adds a ton of volume which is something I traditional find pasta lacks which leaves me unsatisfied. A few sundried tomato’s for flavour and BOOM 💥 a delicious meal in 10 mins. What’s your favourite quick weeknight meal?

  • Since I have moved to a “Cleanish Life”, these are the things I find the most difficult: . 1) Watching your kids eat. 🤦🏻‍♀️ I can control what is purchased in the house. BUT I can not control: Birthday parties, airplanes, other peoples houses, your spouse, your parents, schools, summer camp, peer pressure, stores, commercials, the list goes on. You find yourself become the food police for your kids. I would be a hypocrite to say I never ate a pop tart or fruitloops but damn it I have learned so much. But being too restrictive will create worse food issues: rebellion, binge eating, anorexia, bulimia, etc. There must be balance (cleanISH) 2) Food made in mass production: cafeterias, food courts, airplanes, buffets, etc. Many foods that are produced in mass quantities are low quality so they are covered in sauce. Sauces that are full of sugar, butter, cheese, preservatives, etc. These are to make up for the lack of quality and trick your taste buds. Once you have gone clean, your body will know the difference. 3) People eating because food is just there: breakrooms, Costco (not including purely tasting a new product), meetings, airplanes, etc. Food is used to occupy and subdue people. Many of us 🙋🏻‍♀️ eat when we are just bored. Me included but I’m taming that beast. 4) The middle aisles of a grocery store. Real food generally does not come out of a box, can or bottle. Now are more Cleanish products becoming available? Yes. Read labels! 5) Waste...OMG I cannot stand wasting food. I spend so much on fresh ingredients and produce that any bit of waste drives me nuts. Finding the right balance of meal prep can be hard because if your prep too much it may go to waste if your schedule changes. 6) And sadly eating out. The portions are enormous and way too much for any one person. But when food is in front of you, you are more apt to eat it. 🤦🏻‍♀️ Also, excess use of sauces, dressings, cheese and other “toppings”. They have a time and place but really we don’t need so much. Also lack of taste and not enough vegetables.
