  • I always do my best to try and incorporate as much healthy eating into the meals I make for my family as possible but many times it’s a challenge and I end up making two dinners. One for me and one for them. My husband is a meat and potatoes type of guy and the kids are all different. My 14 year old daughter and 4 year old son like a good mix of healthier foods and junk food like sweets but my 9 year old son will not touch a fruit or vegetable no matter how hard I try and only loves savory snacks. The tomato sauce in his pasta is the closest I can get. You can just imagine how expensive food is with the need to have such a variety. I need to find ways to incorporate foods we all like into our meals so I can avoid making two dinners. . Tonight’s dinner is fried chicken cutlets, one thing we all can agree on. I cooked them in avocado oil for a healthier choice and mixed almond flour into the bread crumbs instead of all purpose flour. I made @eatbanza chickpea pasta with creamy lemon garlic avocado sauce for me (recipe in stories) and marinara sauce for them along with an arugula salad and steamed broccoli (not pictured) as the veggie options. I’ve tried to melt cheese on the broccoli to get my 9 year old to eat it but he still won’t touch it. Basically he only ate the chicken cutlet and the pasta. I just have to keep trying! I would love to hear any ideas or suggestions you might have and what works for you in your picky eating situation if you have one? #ResolveToEatMorePasta

  • 《家常牛肉炒高麗菜便當》  將牛肉片以醃料醃10分鐘,醃好後下鍋炒至半熟時加入高麗菜一起快速拌炒,起鍋前加少許鹽調味~就完成了!  簡單又美味,食材於超市全都可以購得,找個時間也來料理看看吧!  -------------------------------  【材料,約2~3人份】 牛肩里肌肉片(火鍋肉片)一盒 200g 高麗菜200g (或隨喜好)  【醃料】 醬油...2小匙 香油1/2小匙 黑胡椒少許 蒜頭一大瓣,磨成蒜泥 米酒1大匙  【調味料】 油1小匙 鹽1/4小匙(或隨口味)  【做法】 ❶ 將牛肉片對切成半(也可不切),加入全部醃料,抓拌後靜置醃約10分鐘,備用。 ❷ 高麗菜洗淨後,手剝成小葉(也可用切的),備用。 ❸ 鍋內倒入少許油,油溫熱後將醃好的牛肉片下鍋,以中火拌炒。 ❹ 牛肉片炒至半熟時,加入高麗菜。 ❺ 高麗菜略炒軟後,加鹽調味即完成。 -------------------------------  【料理筆記】 ✍️選擇品質好的高麗菜能為這道料理加分唷,試著不要將高麗菜炒的太軟爛,讓清甜脆口的高麗菜及醃入味的牛肉片,全部一起入口~享受超棒口感!。  ✍️便當夥伴:煎厚蛋、蒜辣炒豆苗、公公滷的豆干、蒸南瓜。  -------------------------------  【無關料理的自言自語】  日前女兒問:媽媽,我下學期想自己帶便當,可以嗎?  媽媽我回:我們3年級再開始,先讓媽媽做一下準備,好嗎?  女兒問:要做什麼準備? An easy rule of thumb to try and nourish ourselves better is to pack plenty of (natural) colors into our everyday food. This salad bowl checks all those boxes ✅: organic greens, red and yellow sweet bell peppers, pomegranate, creamy avocado, smoky chipotle salmon and a prune-filled middle! California prunes are packed with dietary fibre and magnesium, boron and Vitamin K, which helps slow bone loss!👊🏻 . If you’re a fan of balsamic vinaigrette (but not the sugar that often comes with store-bought varieties) here’s an easy California prune balsamic vinaigrette recipe naturally sweetened and thickened with prunes! 💁🏻‍♀️⭐️✌🏼grab the deets below!👇🏼 . 5 prunes (pitted) 3/4 cups of water💦 3 -4 tbsp extra virgin olive oil 2 tbsp red wine vinegar 1/2 tsp Dijon mustard 1 tsp garlic, minced 1/2 cup balsamic vinegar sea salt and pepper to taste 🧂 . In a small sauce pan, simmer prunes and water until the water is almost gone. Place prunes and leftover water in your food processor and pulse until smooth. (besides protein pancakes obvs 🥞) but I don’t have it that often because granola can be so high in calories. . I like to eat things like this when I’m on holiday as the ‘treat’ that I don’t normally get to have.. BUT ALSO... low fat Greek yoghurt is also a fab natural source of protein and if I don’t go toooooo over the top with the granola part 🙈(Hard!) it is high in protein breakie! . I love a drizzle of honey 🍯 on my yoghurt and plenty of fruit toppings 🍓🍏🍌🥝 . #healthyinspiredlifestyle
