  • Chickpea and mushroom curry! This is one of my favourite quick and easy dinners that requires simple ingredients. Not to mention that it’s super cosy and flavourful! I’ve included the recipe below for anyone that wants to give it a go (and I would totally recommend it!) ☺️. Happy weekend everyone! 💚 1 clove garlic, minced 1/2 small onion, chopped 150g (around 2 cups) mushrooms, chopped 1/2 small zucchini, chopped 1/2 can coconut milk 2 tsp curry powder 1/2 tsp cumin 1/2 tsp garlic granules  1/2 tsp turmeric 1 tsp arrowroot powder Salt and pepper to taste  Spinach Rice or noodles to serve Sesame seeds to serve Add the garlic and onion to a non-stick frying pan and cook for 2-3 minutes. Add the mushrooms and zucchini and stir for few minutes more, until the mushrooms cook down. Then, add the coconut milk, curry powder, cumin, garlic granules and turmeric. Bring to a gentle simmer and cook on a low-medium heat for around 5 minutes, stirring frequently, before adding the arrowroot powder and stirring for a further 2 minutes to allow the curry to thicken. At the last minute, season to taste with salt and pepper and add the spinach.   • Lemony Chicken + Broccoli Skillet Meal 🌞🙋‍♀️🍋 - { THIS skillet is my new FAVE for so many reasons: 1 - FLAVOR 2 - Simplicity 3 - Capers & Fresh Lemon 4 - Cleanups no problem! ~ 4 boneless, skinless chicken breasts large head broccoli, broken into florets 1 Tbsp avocado, or olive oil sea salt and fresh ground black pepper, to your taste 1 tsp chili flakes 2 Tbsps capers 1 cup chicken broth 1/4 cup fresh squeezed lemon juice 3 cloves fresh garlic, minced or pressed fresh lemon slices to garnish (optional) Instructions: Heat oil in a large skillet over medium-high heat. Season the chicken with sea salt, pepper and chili flakes and rub it on both sides. Cook chicken on the skillet for about 3-4 minutes per side or until golden brown. Remove and set aside. Add in the chicken broth, lemon juice, capers, and garlic to the skillet. Stir and scrape up the brown bits from the bottom of the pan. Add in broccoli, then nestle in the chicken back to the skillet. Simmer for about 10 minutes, until broccoli is bright green and tender-crisp and chicken is cooked through. Garnish with lemon slices and enjoy!" These Sweet Chili Chicken Meal Prep Bowls with jasmine rice, bean sprouts & cilantro are a delicious one-skillet make-ahead lunch idea that'll carry you through the work week! Now, the key to these Sweet Chili Chicken Meal Prep Bowls is tossing cut up chicken breast chunks with egg and cornstarch to create a little bit of faux breading on the outside... once you have it coated, go ahead and saute with some olive oil and salt until browned. Then, you toss with sweet chili sauce and sriracha (optional, for spicier bowls!) and top with whatever veggies you have on hand! Been a while... but I’m back. 😎 And I’m a few weeks behind but HAPPY 2019! 🎉 I wanted to post a reintroduction for all my new followers 👋🏻 and for the ones that have been around for a while 🙏🏻 because as the years go by things change and so does the purpose of this page for me. . When I first started Nashfitfoodie it was for a school project (seriously 😂) but little did I know at the time, it would turn into sooo much more than that. This page has given me the opportunity to connect with SO many wonderful people, it has brought me out of my shell and pushed me to do things like start a health coaching business and teach fitness classes (which I would have never thought I could a few years back), Nashfitfoodie became a platform for me to share the things/places I loved while also truly helping me along my own health and wellness journey as well. I am forever grateful for my professor who challenged us with the assignment of starting a blog about something we loved because of it wasn’t a requirement I would have neverrrr had the guts to start a food/health blog just because. 😂 Best decision ever made. 😉 . Now 4 years later it is so awesome to look back and see how far I’ve come. Personally, physically, and mentally. As silly as it sounds, Nashfitfoodie has helped me grow in so many ways and I am so thankful for it all and for everyone who follows along. So, if you follow me for restaurant recommendations, random health tips, funny quotes, inspiration, or anything at all THANK YOU for being here. For those of you that have been here since the beginning thank you for allowing me to find my voice and evolving with me along the way. This year comes with a lot of changes for me and I’m sure it will all show up on this page. My 2019 goal is to make Nashfitfoodie a little more personal than it has been in the past because health is SO much more than what you eat, it’s the choices you make on a daily basis in every area of your life- work, relationships, physical activity, mental health, etc. We are all on a constant search for balance and it’s always a good feeling to know we’re all in it together 😉

  • Yesterday the email that I sent out spoke about goals and what I have noticed that the top goals for the year ahead are ❤️ • Obviously starting the year with a fitness related goal ranked really high on the list 💪🏼 • So, with that being said, it seemed almost fitting that I share this #throwbackthursday pic on this fine Thursday morning 😜 • I’m throwing it back to November 2017 when my goal was to qualify for SA champs in Powerlifting 🏋🏽‍♀️ • I qualified but there were certain aspects of the sport that I didn’t enjoy, namely having to weigh a certain number to fit into a weigh class, which is why I decided that competing in powerlifting wasn’t for me 🙅🏻‍♀️ • I did, however, fall in love with the training...and as I said in my email- There’s morning better than focusing on WHAT your body can do instead of focusing on HOW your body looks 😜 • I spent last year without a fitness goal...in fact, that was actually the goal...I wanted to train for life BUT this year I’ve decided to set a few in place 😊 • I’m super excited about it too 🥳 As soon as I have my specific goals in place, I plan on sharing them and hopefully, sharing the journey 😋 But first...Tell me, what are your fitness related goals?

  • Potato nachos 😝⁣⁣ ⁣⁣ One of my favorite dinners that I can only have about once a month because it’s so filling and I don’t ever wanna get sick of it 😂 tried a new mock meat this time and it was awesome! It included mushrooms, cauliflower, walnuts and spices 😋 it even looks like real meat 👀 The only thing I will do different to the meat next time is add some cooked onion! Besides that, I topped with cashew cheese, garlic mayo, and all my favorite veggie toppings! All of this made with 100% Whole Foods ☺️

The problem is, a LTC (lettuce, tomato, cucumber/carrot) salad is less than inspirational and first time veggie eaters see it as a watery side dish that will never satisfy their hunger 🙅‍♂️⠀ .⠀ Creating tasty salad combos is great.   • #mywhy ❤️ I want to be healthy for me, but more importantly, I want to be healthy for him. I’ve been with my husband 17 years and the thought of not being side by side until we are super old scares me to death. We lost my dad when he was 59 and it has taken a lot of joy out of my family’s life. Especially my mom who became a young widow. I want to live life to the fullest right by his side. And truth be told, I am LOVING being the hot wife I’ve always wanted to be for him. He’s loved me no matter what but I finally feel like I’m able to give him what he truly deserves. A beautiful, happy, and most importantly, healthy partner. Ps...he makes me dinner and feeds our babies while I get my hair done. I love him.

You know what I mean😉 You LIVE for the latest/greatest supplements & super foods; You can't help but go into healthfood/supplement store you pass by; You routinely spend an arm and a leg on new products that (usually) end up gathering dust on your counter...yet you keep doing it. Sound familiar? . . Don’t worry - you are NOT alone! I used to be a HARDCORE supplement junkie...but I gotta be real with you for the sake of your health AND your finances . . I know it seems harmless and makes you feel good (until you check your bank account 😉), but when it becomes a habit, it's actually a sign that something deeper is going on . . On a literal level, you are buying a product marketed to address a problem BUUUT a lot of the time I see people buying products for problems they don't actually have. On a SUBCONSCIOUS level, you are buying the product to fix a deeper rooted issue (usually some form of not feeling like you're enough in some way) . . ✅SO HOW DO YOU STOP THIS PATTERN? Address the underlying problem!!✅ . 👆(1) Ask yourself what you're *really* trying to accomplish by buying this product . ✌️(2) Ask yourself how you can address the root of the ACTUAL problem you're trying to solve . 🖖(3) Do those things! I think you can own your salad though and I love them (i do!). And eat them daily. They are a part of my diet, not a diet food item, if that makes sense. I fill them to the brim with leafy greens, flavorful veg, proteins and healthy fats. And the possibilities are endless for salads. Whatever you palate desires, just chuck it on in there. Deets for this salad are as follows: 👉🏻greens/base is a mix of spinach and parsley, massaged with avocado oil, S, P and lemon 🍋 👉🏻 toppings include cherry tomatoes, halved, HB egg, cottage cheese, olives and feta cheese. All seasoned with a little pepper. Super bummed I don’t have an avocado, otherwise I’d throw that in there too🤤 Happy Wednesday folks! Hope it’s great.
