Salted Caramel Coconut Slice by @healthyeating_jo 💛 Recipe:⠀
70g / 2/3cup almond meal⠀
40g / 1/3 cup coconut flour⠀
2 Tbsp coconut oil melted ⠀
2 Tbsp rice malt syrup⠀
Mix in a bowl and press into a lined tin or silicon molds ⠀
20g / 1/2 cup shredded coconut ⠀
70g / 1/4 cup tahini⠀
70g / 1/4 cup almond butter⠀
1/4 cup maple syrup⠀
1/2 tsp vanilla extract⠀
1/4 tsp Himalayan salt⠀
1 Tbsp almond milk⠀
Add ingredients to a food processor and blend until smooth, adding more almond milk if required⠀
Spoon over bases and smooth down⠀
1/4 cup coconut oil⠀
2 Tbsp maple syrup⠀
1 tsp almond butter⠀
1 Tbsp cacao⠀
Melt in a saucepan over low heat and spoon over caramel⠀
Place in the freezer overnight to set⠀
Slice or remove from molds and enjoy!
The first girl Scout that came to my door last year... Steak cauliflower fried rice was dinner tonight!
I started by marinating steak tips in EV olive oil, garlic, coconut aminos, lemon juice, yellow mustard, franks red hot sauce, and a pinch of ground ginger.
I then used a stove top wok to cook the steak in batches.
I set the cooked steak aside and cooked up the veggies. I then added the steak back in once the veggies were cooked.
My husband wanted regular fried rice, so I had already cooked up some white rice on the side.
I got out a 2nd pan and scrambled 3 eggs in it. Then I set the eggs aside. ...
In that same egg pan, I added about half of the meat and veggies, white rice, and half of the eggs. Stirred it together and his was done. ...
Back to the cauliflower fried rice.
Once I removed his portion, I added a bag of frozen cauliflower rice and stirred it all together. The cauliflower rice took about 5 min to cook. ...
That’s it! ...
It was delicious and we are both excited to eat it for lunch tomorrow!
The boys do not like fried rice🙈, so they ate the steak with rice and raw carrots on the side.

This is strange that I am doing this video 😂😬but I couldn’t avoid the number of queries I got asking me how my Jowari rotis come so smooth with out breaking or having cracked corners .. This week you will find us in Matakana Friday and Saturday.

I’m trying to incorporate more fruit, protein and healthy fats into my diet, so I made this bebe protein bowl. It was finally an excuse to use my @coconutbowls! I made this with @bluediamond unsweetened almond milk, frozen bananas, organic frozen berries from @traderjoes, walnuts, and 2 scoops of strawberry protein from @22daysnutrition. This was so damn good and filling, I ate it in about 5 mins 🤷🏻♀️🤦🏻♀️🙈
Ever have one of those days when your stomach feels like a bottomless pit?
That was definitely me today! So this ginormous meal was my solution: 🥩 Pasture-raised lamb chops marinated in turmeric + rosemary
🥕 Cumin-dusted carrot fries
🥗 Romaine salad
These carrot fries have been a fav for a long time and always hit the spot. Here’s how to make them: 🔸 1 lb carrots 🔸 1.5 tbsp avocado oil
🔸 1 tsp ground cumin
🔸 1⁄2 tsp sea salt
🔸 1⁄4 tsp pepper 🔹 Preheat oven to 425° F / 215° C.
🔹 Slice carrots into long, fry-shaped wedges. 🔹 Mix oil, cumin, salt, and pepper together in a large bowl. Add carrots and toss to coat evenly.
🔹 Spread evenly on baking tray lined with parchment paper, making sure they are not too crowded.
🔹 Bake for 45 minutes, stirring once during that time.
🔹 When fries are done (cooked through and starting to turn brown), remove from oven and serve right away!
This post may be a bit TMI, but I’d rather be open for those that are looking for advice and want to know what I went through. I’m also not seeking sympathy, but rather using this as an outreach. It wasn’t a change because of a “trend”, but a change for health reasons. I had all the symptoms that a Celiac has with one difference - it thankfully doesn’t cause damage to the intestines. Diarrhea. Migraines. Weight loss - at my lowest point I weighed 95 pounds. (The second picture is of me (right side in red dress) before I went GF). Hair loss. Vitamin D deficiency. Chronic fatigue. Skin rashes. Constant nausea that never went away. Doctor after doctor tried to convince me that I was merely anxious and tried to put me on an anti-anxiety med. One thought I had an ulcer or an eating disorder. I felt like they were just trying to prescribe me a pill to shut me up, but I knew there was more to it. ◽️◽️◽️
I took matters into my own hands and researched my symptoms. At first I was scared it was Celiac. All of my symptoms fit the bill, but both of the blood tests I’ve had were negative. By the way, the only way however to be 100% sure it’s not celiac is to have an intestinal biopsy, which I’ve never had. I’ve read that patients have had negative blood work only to test positive in their biopsies. ◽️◽️◽️ Recent studies from the University of Bologna have identified it as non-Celiac gluten sensitivity. ◽️◽️◽️
To make a long story short, I went gluten-free back in 2009 and started to see results right away. A month long of migraines were gone. Skin rashes? Gone! I eventually began to start putting on weight and stopped losing so much hair. For the most part the nausea went away, but I still found myself having bouts of it. By more closely evaluating labels, I was finally able to get rid of all of my symptoms and am very strict about not eating gluten. ◽️◽️◽️

EASY PEASY LEMON SQUEEZY 🍋 Fish and veggies is my go-to “healthee” dinner to make at home. It’s easy as can be! DO IT 👉🏼 Cut brussel sprouts and eggplant. Drizzle in avocado oil and sprinkle with garlic powder. Line baking sheet with parchment paper. Place salmon and brussel sprouts on baking sheet. Squeeze juice from half a lemon on salmon and top with lemon slices. Bake in oven at 375 degrees for 20 minutes. Sauté eggplant on medium heat until tender. Enjoy!

I’ve been dying to make a Tofu Bahn Mi sandwich, but I haven’t been able to find any vegan & gluten-free bread that I like. Instead, I’m doing them taco style! They start with marinated tofu that’s grilled to perfection. Topped with pickled carrots & cucumbers, jalapeno peppers, cilantro & a creamy dressing that has the perfect amount of kick. These will surely make you a happier person! Seeing that tomorrow is #tacothursday they along with our other tacos are only $2. 😳😜😋 .

Gluten free muffins!
Apple and blueberry- grab one today, fresh out of the oven.
There is nothing like the feeling of having your flour bin full! Once it gets below the halfway point I stress out with each recipe as to when it will run out (even though it only takes five minutes to whip up--anybody else find the little tasks the hardest🙋). I am also in loooovvveee with this battery free scale! I used to always forget to turn my previous battery powered scale off and I would burn through batteries like crazy.
