Sweet Potato & Kale Mac n’ Cheese by @thecolorfulkitchen 💛 Recipe:⠀
1 large sweet potato⠀
1 package pasta of your choice⠀
1 cup non-dairy milk⠀
2 cloves garlic⠀
1 tbs dijon mustard⠀
¼ cup nutritional yeast⠀
2 tbs tamari⠀
1 tbs olive oil⠀
salt and pepper to taste⠀
2 cups kale, shredded⠀
Preheat oven to 400°. Poke holes in sweet potato and wrap in foil. Bake until tender (45- 60 mins).⠀
While the potato bakes, prepare pasta according to instructions on container.⠀
Remove potato from oven and peel away skin when it's cool enough to handle.⠀
Place in blender with all ingredients (except kale) and blend until smooth.⠀
In a large pot, heat kale with a tablespoon of water until wilted. Stir in sauce and pasta and heat until warm.⠀
Transfer to plates and enjoy right away!⠀

Today I got a refreshing drink from @starbucks ‘mango n dragonfruit’🐉
It was super sweet but tasty 😋and it had little chunks of dragon fruit in it!!! I totally understand why they call Dragonfruit a ‘super-fruit’ because it is high in fibre, protein, omega essential fatty-acids! Plus! It’s also rich in many minerals 👍🏻 I’ve never eaten much of dragonfruit before but honestly it’s super yummy 😋 so I’m going to find more recipes that include it! Let me know if you have any good recipes as well ☺️ It’s Caitlyns and I anniversary 🌹 today! We always try and do something fun every month on the day and I think today we are going to @cineplexmovies to go watch escape room! Movies is always our go-to date night! It’s super fun and I love seeing new movies 🎥 Ouu! We will get popcorn🍿 as well! I used to hate getting popcorn in the past and I would feel guilty for a couple of days after eating movie 🎥 theatre popcorn 🍿 but now I allow myself to eat it and if I get any uneasy feelings I remind myself that popcorn 🍿 is yummy 😋 and that my body is healthy and I know that I will feel better soon! I just try and not over think it and I try to reassure myself that it’s normal to feel a little uncomfortable 😣 after eating it but I can’t let myself dwell too much on it!☺️ it’s a yummy treat! YOU GOTTA NOURISH TO FLOURISH💐

Penne pasta with a spinach-avocado sauce, baked sweet cherry tomatoes, arugula and black sesame seeds by @esra.rakic.vegan 💚
For the sauce:⠀
1 cup baby spinach ⠀
1 avocado ⠀
1/4 cup water⠀
2 tbsp nutritional yeast⠀
2 tbsp lemon juice⠀
1 clove garlic⠀
How to make:⠀
Blend all the ingredients until you have a smooth consistency.⠀
Mix the pesto with your favorite type of cooked pasta and enjoy!

After an emotional week, I’m finally ready to share my progress. I’m not where I want to be, but I’m so damn far from where I started. This journey has been one of the hardest decisions of my life. Remaining committed to the process is hard, eating with a purpose is harder, and trust when I say traveling for work 80% of the year makes it even harder. I’ve conquered training at least 3 days a week no matter the city or state and with or without my coach, making good food choices and adhering to a gluten free diet, surviving on poor quality sleep for uncomfortable hotel beds, going straight to the gym from the airport, managing high stress while working in corporate America, pushing through hip and foot pain since I have a metal plate in my hip and have had 4 foot surgeries, working out when I didn’t want to and most importantly not focusing on the numbers when I could have and sometimes wanted to. This is not about how you look, but rather who you become in the process. And if y’alls IG feed is like mine, you see a lot of women posting perfect half naked pictures all the time so I figure I’d drop the real damn deal! Lol Yeah I know some of y’all got body (and have made some adjustments! Lol) and I ain’t mad, but some of us (ME) are just out here trying to build their confidence and look better while doing it. Just thought I’d balance out ya IG feed! Thank you to my phenomenal coach @capacitytrain who has committed so much of his time to help me fall in love with training. They have built such a beautiful life together over the last 72 years (!!!!!), and I am so lucky to have such a close relationship with them. They mean the world to me, and I cherish every moment I have with them💕

There is nothing like the feeling of having your flour bin full! Once it gets below the halfway point I stress out with each recipe as to when it will run out (even though it only takes five minutes to whip up--anybody else find the little tasks the hardest🙋). I am also in loooovvveee with this battery free scale! I used to always forget to turn my previous battery powered scale off and I would burn through batteries like crazy.
