  • Red lentil curry with brussels and rice by @vegamelon 💛 Recipe:⠀ lentil curry⠀ -1 onion, chopped⠀ -2 tbsp. red curry paste/curry spices of choice⠀ -4 cloves garlic, minced⠀ -1 tbsp minced ginger⠀ -1 cup dry red lentils, rinsed⠀ -1 14-oz can coconut milk⠀ -1/2 cup vegetable broth/water⠀ -salt, pepper, chili flakes, to taste⠀ In a large pot, sautee onions until tender, then add in curry paste, garlic, ginger. Coat evenly and add some water to prevent sticking. Add lentils and coconut milk to the pot, then turn the heat to low and cover the pot, stirring occasionally. Add broth/water as needed. Once lentils are tender, after 10-ish minutes, serve warm and enjoy! Served with Brussels sprouts and rice. ⠀ Enjoy! #letscookvegan

  • This week I started my clinical rotation, y’all👩🏻‍⚕️ & I am BEYOND excited to learn from these amazing RD’s for 10 weeks!🌟. . . Can you believe in just 3 months I’ll be completing my dietetic internship?!👩🏻‍🎓 & an exam away from becoming an RD😍! #YAAASSS🥳. It’s crazy how this journey started from 2016 when I decided to take a leap of faith, leave SFL & move to Jax🌴 to study #nutrition & #dietetics🍎. I just knew I had to and it’s been the BEST decision I have ever made.💯 . . Also another cool thing about being a future RD is you get to wear hilarious food pun buttons🥬😅. . . #KaleYeah #rd2be #clinicals

  • If you haven’t discovered the joy of uplifting or educational podcasts or motivational speeches, I highly encourage you to seek them out! It’s a major source of mental energy for me, and the reality is to change our lives we have to change our thought processes- which means we have to get out of our own way and our own heads. I’ve listened to enough random ones on YouTube that I just get a new suggestion every day, as well as I subscribe to podcasts I find motivating. Which means it takes me all of 30 seconds to find something positive or informative to put on in the background while waking up, making breakfast, or running errands. It was one of my favorite things I’ve added to my morning ritual in 2018 🙌🏼 In other news... I finally convinced my 4 y.o. to take a day off oatmeal for breakfast 💃🏻 •1 gluten free @vansfoods waffle •@grounduppdx cinnamon snickerdoodle •@woodstockfoods frozen berries •sautéed spinach with avocado and @traderjoes everything but the bagel seasoning I forgot how much I love the savory and sweet combination for breakfast. Anyone else with me? What are your favorite things to listen to? Right now mine are: anything by Tony Robbins, the Influencer Podcast, and Awesome with Alison.

  • We did a sheet pan of roasted chicken legs, lemon, limes and radishes so that we would have easy meal prep. This is one of dinners we made. We took one can of diced tomatoes, drained the liquid, chopped three cloves of garlic and 2 shallots. Roasted in the oven for 30 minutes at 350. Added shredded chicken, zucchini noodles (which we spiralized in advance) and shredded Parmesan cheese. Baked for an additional 15 minutes or until cheese melted. Serves two.

Made my own sauce from liquid aminos, ACV, garlic, lemon, s&p (you guys know I don’t like to measure 🤪)! Added some chicken I prepped the other day, and a little brown rice—also prepped in advance, topped with nutritional yeast and unsweetened coconut 🥥 BOOM! Took like 10 minutes!   • We did a sheet pan of roasted chicken legs, lemon, limes and radishes so that we would have easy meal prep. This is one of dinners we made.   • need a healthy crunchy snack for you and your family, packed with tons of vitamins and flavor? we’ve got the best KALE chip, yes we said it, kale recipe for you. 🌿KALE CHIPS ▫️one bunch of kale leaves ▫️1/2 tablespoon evoo or melted coconut oil ▫️garlic powder ▫️1/4 tsp salt ▫️1/4 pepper Preheat oven to 300 degrees F. Line a baking sheet with parchment paper. Remove stems from leaves of kale and roughly tear into large and small pieces. wash leaves and thoroughly dry. 🌿 Add kale leaves into large bowl. Massage the oil into the nooks and crannies of the leaves until coated. Now sprinkle seasoning and toss to combine. 🌿 Spread kale onto prepared baking sheet into a single layer. DO NOT overcrowd the kale. 🌿 Bake for 10 minutes, rotate the pan and bake for another 12-15 minutes more until the kale begins to firm up. The kale will look shrunken, that is normal! 🌿 Let the kale chips cool on the sheet for 3 minutes before digging in. This part really makes a difference!   • Kale Caesar salad with roasted chickpeas! 💚🌿 The dressing base is hummus and only takes 5 minutes to make. If you’d like the recipe it’s from @minimalistbaker. I added sriracha to the roasted chickpeas before putting them in the oven for some spice👌🏼🔥 I know that kale can be hard to chew sometimes, but if you add lemon or add a dressing that contains lemon, like this one, it breaks down the fibers making it easier to chew and digest😊💕

Spring mix tossed with lemon juice & olive oil, fried egg cooked in @fourthandheart ghee, sliced avocado, crispyyyy roasted white sweet potato and all topped with red pepper flake and sesame seeds. Seriously the easiest meal to make and I’m for real OBSESSED 😍 Hope your day is awesome friends! ☀️
