  • Nope, uh-uh, nay , nah, no way, not for all the tea in China , under no circumstances, , gone! I am no longer weighing in...yep you heard me**news flash** I PUT MY SCALE AWAY!! I would have thrown it out but my 15 year old son is trying to GAIN weight and uses it all the time. As for me I have fought my whole life with that stupid contraption and even when I was in the best shape of my life the numbers were never enough. So this magic number I have in my head doesn't matter anymore because it brings me to a fake reality that I will never be good enough!! I knew by my muffin top in my size 14 jeans that my weight had gone up and I needed to reign it in, so I started fasting again and working out more. Then all the pretty weekly and monthly weigh in charts made me think that I too needed to jump on that scale. Oh that was fun!! After I got off of it it, I felt as motivated as a hippo stuck in mud. I'm not advocating denial but we all know a few chubbies that live and die by their scale and it has never helped them dig out of their hole. I am a fairly happy, well-adjusted person but put me on a scale every week and I become one depressed individual. I have other ways I can measure my success and journey and I have every intention of monitoring my progress weekly but who says it has to be by some numbers on a damn scale??!! Sticking to a plan is so important and if the scale triggers more eating off track than on: I say BULLOCKS! So congrats if that metal piece of junk whispers sweet words of encouragement to you but it does nothing for me. Day 19 of my 100 day journey and I will smile a little more and walk with a cheerier step because I am free from the chains of weekly weigh-ins. #freedom #fromthe #scale #goodbye #pain #journey #slowandsteady #omadness #omad #fasting #life #thoughts #happy #blessed #worthy

  • Slice eggplants in half. Cut it criss cross like shown in the photo. Eggplant was sprinkled with salt and let to rest for 30mins. Wipe the moisture off the eggplants with a paper towel, sprinkle some garlic powder, pepper and olive oil. —————— Preheat the oven for 200°C. Arrange the eggplants cut side down on the baking sheet and roast it for 1 hour. —————— After the eggplants has roasted for an hour, let it rest for 10 mins and scoop the flesh out to create a boat. I left a thin layer of flesh in. Add the meat sauce and top it off with shredded mozzarella and Parmesan. Let the eggplant boats bake in for a further 7-10 mins or until the cheese melts.

I’ve been journaling a small amount about each day after I had lunch with my Grandma and was asking her about her childhood. She couldn’t remember many details and I wished more than anything I could read a journal from when she was younger to get some insight of what life was like in the 40s/50s. So maybe someday I can give this to my grandkids! On another note, I finished my first full day of fasting today. I did 23:1 (or OMAD) and am going to keep doing it to see how it goes. It really wasn’t too bad, but it was definitely hard to get a days worth of calories in in one hour. I don’t want to eat too little because I know it can slow down my metabolism for the long run.   • So good, so messy to eat. 90 g cheese crisped in the oven, 200 g ground beef with taco seasoning. 1 tbsp of sour cream, some tomatoes, half an avocado and lettuce. I was hesitant to use cheese as a wrap but it was sooooo good. It works better for cold fillings so I think turkey cold cuts lettuce mayo would be good. This taco was 997 calories, as I’m OMAD i could deal with it. The last week I’ve literally been eating less than 600 calories so this was a leap. #ketomealprep #keto #omad #ketodiet

  • Another weird mix of a dinner. Something you don’t know about me - I generally would rather have a lot of variety in a meal than one or two big things. It doesn’t happen much on keto but when I have little bits of stuff around, it makes me happy. Here we have the rest of the rotisserie chicken with gravy, some queso blanco, guacamole that hubby made with those avocados that needed to be used up, a cheddar brat, and the sprouts were so good last night that I bought & made more tonight.   • What is this magic! Some days you have treats - so coffee breaking with these protein filled #glutenfree #grainfree #lowcarb salted glazed maple bacon scones. Thanks to @gnomgnom.yum adaptation. Deets below:- (if dairy free paleo substitute sour cream with coconut cream and may use coconut oil instead of butter) Ingredients/steps: ➡️warm oven to 350 degrees and line a baking tray with parchment paper ➡️mix together the following ingredients in a small bowl: ⭐️1/3 cup sour cream ⭐️1 tbsp apple cider vinegar ⭐️1.5 tsp alcohol free vanilla ➡️In a larger bowl whisk together the following: ⭐️1 cup almond flour ⭐️1/2 cup flax meal ⭐️3.5 tbsp coconut flour ⭐️1/3 cup whey protein isolate ⭐️3.5 tsp baking powder ⭐️1tsp gluten free xantham gum ⭐️ 1 tsp Cinnamon ⭐️1/2 tsp salt ➡️ add to the above powdered mix: ⭐️diced cold butter 8 tbsp - pulse until incorporated into pea sized bits like for traditional pastry dough. ➡️add the wet cream mixture to the above dry ingredients and mix gently ( don’t over mix) until it’s a sticky dough ➡️place in a round shape and cut into 6 equal wedges. ➡️ bake for 15 minutes and then cover with foil to bake another 4-5 minutes ➡️cool for 15 minutes prior to glazing ➡️to make the glaze mix ⭐️3 tbsp powdered compliant sugar ⭐️1/2 tsp maple extract ⭐️1tbsp melted butter ⭐️ 3 tbsp sour cream ➡️glaze the scones and scatter cooked pastured bacon bits and some flakes of Maldon salt to finish ⭐️⭐️⭐️Delish !!! .. .. #paleo #paleodiet #paleofriendly #paleorecipes #primal #eatwell #healthyfood #ketogenicdiet #keto #ketodiet #weightloss #omad #lchf #snacks #bake #treats #ketodesserts #fitfoods #foodie #foodgram #guthealth #cleaneating #nutrientdense #healthy #if #lowcarbhighfat #protein
