  • Creamy sun-dried tomato pasta by @nm_meiyee 💛 Recipe: Ingredients 250g Organic sorghum spaghetti ⠀ 2 tbsp olive oil⠀ 3 gloves garlic, minced ⠀ 1 small onion, diced ⠀ 2 tbsp cornflour⠀ 400ml coconut milk ⠀ 1/2 cup sun dried tomatoes, drained⠀ 2 tbsp nutritional yeast ⠀ 1 tsp chilli flakes ⠀ Basil, salt and pepper to taste⠀ ⠀ How To Make: Cook your pasta according to the package instructions, but leave the pasta just slightly undercooked. Set aside.⠀ Add 1 tbsp olive oil into a large frying pan over medium to high heat. Add garlic onion and cook until lightly browned. Mix in cornflour and cook for a further minute. Add coconut milk and mix until smooth. ⠀ When mixture has thickened slightly, pour this into a blender. Add sun dried tomatoes, nutritional yeast and blend until smooth. Set aside. In a frying pan and heat up 1 tbsp olive oil. Pour the sauce into the pan, making sure the heat is low to medium to prevent it from sticking. When the sauce is heated through, add in the pasta. Add pepper to taste and chilli flakes or a splash of water if needed. When the pasta is heated through, serve and top with basil and sun dried tomato. Enjoy! #veganfoodspace #veganlunch #lunchideas

  • On my purple cabbage kick until further notice💁‍♀️😅 I seriously can't get over HOW good it is. And if you couldnt tell just frolic its color, its PACKED with nutrients. You all know how much I love it roasted🔥, but lately sauteed with coconut aminos has been my JAM💃 Bowl deets👇 Cabbage sauteed with coconut aminos {medium heat with avo oil, hililayan salt, and about 2 tsp coconut aminos, sauteed for ~15 mins} + roasted Japanese sweet potato rounds + leftover free range chicken + bib lettuce + half an avo🥑😋 .   • Everyone loves banana bread, and this chocolate version is one of my favorites! If your kids are like mine and enjoy eating only half of a banana, 🍌don’t worry! Just leave the rest in the peel, pop it in the freezer and then use it in a delicious recipe like this! 😋🍌🍫 ....or a fruit smoothie. But you know, balance 😆. CHOCOLATE BANANA BREAD INGREDIENTS 1/2 cup butter, one stick 1 cup sugar 2 eggs, large 1 teaspoon vanilla extract 1 1/2 cups flour, all purpose 1/2 cup cocoa powder 1 cup semi-sweet chocolate chips 1 teaspoon baking soda 1/4 teaspoon salt 3 bananas ripe 1/2 cup mini chocolate chips INSTRUCTIONS Preheat oven to 350º F. Cream butter and sugar together for 2-3 minutes until light and fluffy. Add 2 eggs and cream together again for 1-2 more minutes. Add the vanilla and ripe bananas, whole, to the bowl. Mix until combined and the bananas are mixed in. Mix the semi-sweet chocolate chips into the dry ingredients. Add the mixture to the bowl and mix until just combined - do not overmix. Pour into a greased loaf pan (see note) and sprinkle mini chocolate chips over the top. Bake for 45-50 minutes, or until a toothpick comes out with a few crumbs on it. NOTES I use a standard size loaf pan - 9 in x 5 in. If you have 2 smaller pans, that is also fine. Just adjust the baking time by about 15 minutes. Mini chocolate chips are optional... Or are they??? 😂😉
