Raw pad Thai ✨
This was suppppppper yummy! Could have eaten the whole lot but as they say, food is best eaten shared ☺️ Kelp noodles have iron, vitamin K and calcium and are a nice low carb option if you prepare them right! Soaking is a MUST for at least 10-20 mins before you use them. This recipe serves 3-4 • 1 pack of Kelp noodles • 1 small carrot grated • 1 grated zucchini • bean shoots • 1/4 of a red cabbage sliced thinly • coriander • Thai basil • salted peanuts • DRESSING - 1 tsp sesame oil • 1/2 cup of tahini • 1/4 cup Apple cider vinegar • 3tbs tamari • 1/2 a lime • 1/4 cup olive oil • 💫
So many of you msged me about this meal when you saw me making it on my insta stories a few weeks back. It’s a raw kelp noodle “pad Thai” I just threw a bunch of veggies that I had sitting in my fridge into a bowl along with kelp noodles and fresh basil. I made a mixed together cashew butter sauce (a couple tbsp cashew butter + 2-3 tbsp coconut aminos + 1 tsp sesame oil + lime juice + freshly grated ginger and garlic + chilli flakes) poured it over top the noodles and veggies, massaged it in and that’s it! I also threw in some tofu which I marinated in coconut aminos (literally just chopped it into cubes and let it sit in a bowl with the coconut aminos). Such an easy dish to make and takes about 5 minutes! Have you guys tried kelp noodles before? -

Crispy and fresh raw pad thai for lunch today 🥦🌶
Been a bit behind with my vegetable intake for a couple of days and figured this bowl of goodness could help me to get back on track 👊🏼I had a big brekkie today so a light lunch suited me perfectly. This took me just a few minutes to make and it was so fresh and tasty 🤩💫
It´s all raw. Broccoli, radishes, red cabbage, carrots, zucchini and sprouts :D To make the “spaghettis” I used a potato peeler - easy peasy🌸
🥜Peanut Butter sauce:
1 dl PB
1 tbsp freshly squeezed lemon juice
2 tbsp soya sauce (I used tamari soy)
1 - 2 garlic cloves
3 tbsp water
I tbsp coconut nectar (or honey)
1 cm shredded ginger .
Mix everything together and enjoy 🤤 used the sauce on top because I wanted it to be a quick lunch but you can also blend it with the vegetables and wait for an hour or a few and serve a more creamy pad thai 😘 This sauce guys - IT IS SOO YUM! (Might have been eating a whole lot straight from the jar🙈 could'nt resist!!)

For years I've been getting asked for recipes of things I spontaneously create. With resistance, I've recorded some select special dishes for people to recreate... but that's not what I'm here for. 🌹
I want to make intuitive food that's right for the moment, the available ingredients, and my guests. I want to serve meals that nourish and heal based on what people need right now. It's a special dance with the air, the weather, and the chatter of my guests, while I notice how they gather or part, sit or stand, awkwardly grasping their drink while looking to connect with other souls. All this information helps me sense what's best for me to create for them right now as they are. Then I watch them take a few bites, as their faces change to say, "wow, this is the perfect thing to eat right now."
🍲 I also like making things that can't be recreated later, because they have leftovers mixed in or include special kitchen projects like ferments or random spice blends. The ephemerality of it all excites me, and I like the idea that a particular meal will never be made again. This raw vegan pad Thai was inspired by the lovely @leavesandwanders. Thank you for sharing your recipe with me. I would never have thought of using young Thai coconut as a dressing base, but it was genius. And marinating raw mushrooms is a game-changer. I even did it the other night for a taco salad, and it was totally amazing. This pad Thai was crunchy, creamy, and SO flavorful.
Raw Vegan Pad Thai
1 medium zucchini (spiraled with skin) or kelp noodles
2 carrots shredded
1 Red pepper thinly sliced
Thumb of Ginger
2 heaving Tbls Raw Almond Butter
juice from one lime
1/2 teaspoon Turmeric powder
2 tablespoon coconut aminos
3 dates (khadrawy)
Dash of Cayenne
Blend until smooth
Serves 2 normal people, 1 if you don't play around
You can use zucchini noodles (instead of kelp), and water in place of coconut aminos. Both questionable ingredients. Give it a try!! Link to video!

Another #meatfreemonday hit!! 🥢🌿Yes, I’m calling it on this creation 👏🏼👏🏼 Raw Pad Thai with Tempeh and Peanut Sauce 🇹🇭 Sooo simple....For the Pad Thai, throw some spiralised zucchini, shredded carrot & red cabbage, beanshoots and spring onions in a bowl. In another small bowl, throw in grated garlic & ginger, freshly squeezed lime, tamari, rice malt syrup, peanut butter and @myhemple hemp seed oil. Add a bit of warm water and whisk until a smooth and runny consistency. Sautée tempeh pieces in a hot pan with some coconut and/or sesame oil. Pour the peanut dressing over the veggies and mix well. Pop the sautéed tempeh pieces on top. Finish with sprinkles of toasted peanuts, sesame seeds, dulse flakes and finally @myhemple hemp seeds.
