We have a 20 minute dinner on our hands tonight. That’s why I love cooking seafood for dinner so often: it’s quick. In a large bowl, combine ground turkey and ground pork, cheese, grated garlic, Italian seasoning, bouillon cube, red chili pepper flakes, chopped cilantro and black pepper. Here's the simple recipe⬇️ 1 cup Mayonnaise 3 Garlic Cloves Juice of a half of Lemon 1 teaspoon Dijon Mustard 1 teaspoon Worcestershire Sauce 1/2 cups Parmesan Cheese (buy the good quality by the deli) Put all the ingredients in a high power blender to blend.   • WOOHOOO!! 2 weeks packing my own lunch guys! The challenge continues... 🙌🏻. Not only is this awesome for my bank account but I’m eliminating unnecessary oils from my diet. When I bought lunch at work it was generally some variety of salad with dressings and toppings that no doubt contained or were primarily made up of oil. 🤔Suuuch useless calories (zero nutrients ALL fat) when you can easily make some SUPER yummy plant based dressing at home. I’ve already shared my green tahini dressing but I’ve grown particularly fond over the years of the recipe that I’m about to share with you. It’s avocado based 🥑 because *obviously*, and you can throw it together in 3 minutes WITHOUT a blender. All you need is a fork and a bowl, my friends😝 - I have it on my salad in the pic but you can’t see it underneath all the goodies piled on top (oops!): mash 1 avocado 🥑 with a fork, add 1 lime worth of lime juice, 1.5 tsp of salt - then add 1/2 to 1 full cup of water depending on how liquidy you like your dressing. Does it taste similar to guac? Hmmm kinda! But who doesn’t love guac? So I’m mixing it up (literally), getting creative with the consistency, and presenting you with a genius, oil free dressing for your salads🥗.   • When your boyfriend calls from work to say, “I think I’m getting sick...” . 🥕Veggie Broth 🥕 *Remember: ORGANIC veggies & PURE water! 5 carrots 5 celery stalks 1 small rutabaga 1 golden beet 12 pieces sundried tomatoes 1/2 cup curly parsley 5 sprigs thyme 5 bay leaves 1 tsp ground celery seed 1 tsp ground fennel seed 1 tsp Himalayan salt, more to taste . Roughly chop the veggies and put them in a 5-6 quart pot. I like to use my steamer because at the end I can just lift out the basket and voila! my broth is strained 🥳 Next put the tomatoes, thyme, and parsley in a strainer bag. Mine is a nut milk bag I use for herbs. Cover veggies with water, leaving and inch or two of room in the pot. Measure in ground spices and put in bay leaves. Stir just a bit and bring to a boil, then reduce to a simmer (med-low) for 1-2 hours. Or more if you like a deeper flavor. Then strain, cool, and store. Adjust salt to your liking as soon as it’s cool enough to really taste. Keeps in the fridge for up to 2 weeks, freezer for months. . I always start with a base of celery and carrots and keep the herbs and spices consistent, but you can play around with the rest of the veggies! I prefer roots for the great flavors: parsnip, good beet, rutabaga, turnip, celery root. Some greens would be great in there too. Have fun and experiment with it. I’ve never had a broth I didn’t love. May you all stay healthy! Think I need to start making two of these 😅 Have a wonderful day everyone! ✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets👇🏼 ▫️1 Whole Wheat Wrap (@flatoutbread) ▫️Mozzarella Cheese (@kraft.naturalcheese) ▫️1/2 Avocado ▫️Lemon Juice ▫️3-4 Cherry Tomatoes ▫️Radish, sliced ▫️Handful of Spinach ▫️Onion, diced ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a pan, heat up the wrap with cheese sprinkled down the middle. Once the cheese has somewhat melted, transfer the wrap to a plate. Mash your avocado & add some lemon juice & salt. Add it to the wrap. Slice your tomatoes & radish & add to the wrap as well as the diced onions. Add in your handful of spinach. Wrap it up & slice in half!👌🏼

Just the perfect brunch 👌🏼 Also, I said serves two but let’s be honest...I ate that all by myself 🙈😅 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets👇🏼 ▫️10-12 Mini Potato Medley, cubed ▫️1/4 Onion, chopped ▫️1/4 each Red, Yellow, & Green Bell Pepper, chopped ▫️1/2 Jalapeño, chopped ▫️2 cloves Garlic, minced ▫️2 handfuls of Baby Spinach ▫️2 Cage-Free Brown Eggs (@vitalfarms) ▫️Seasonings: Chili Powder, Smoked Paprika, Cumin, Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Prepare all your veggies. Then in a cast iron, heat up some avocado oil. Add all the veggie, except for the spinach. Add in all the seasonings. Cook for roughly 6-8 minutes. Then add in the spinach & cook for another 2 mins. Create two little holes & crack in the eggs. Cook covered until the egg whites have set. Serve with some fresh cilantro, sliced avocado, salt & pepper! 😋 {Recipe video tutorial in story highlights}

  • 🍠 Chocolate Chip Sweet Potato Waffles ⏲ 15 mins Prep Time | Yields 10 Mini Waffles Fastest breakfast I have ever made! 💨 Was in a super rush this morning but I was somehow still able to pull off these waffles 😳 And they were oh so tasty 😋 I’ve made these before & they have been favorite waffles yet! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Wet Ingredients- ▫️1/2 medium Sweet Potato ▫️2 Dates ▫️2 tbsp Coconut Oil ▫️2 Cage-Free Brown Eggs (@vitalfarms) ▫️1/2 cup Unsweetened Almond Milk (@silk) ▫️1 tsp Vanilla Extract ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dry Ingredients- ▫️1 cup Almond Flour (@bobsredmill) ▫️1/2 tbsp Baking Powder ▫️1 tsp Baking Soda ▫️Pinch of Salt ▫️1/2 tsp Cinnamon ▫️Mini Chocolate Chips (@enjoylifefoods) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Poke holes in the sweet potato & roast for 45 mins at 425°. In a blender (@ninjakitchen), blend in all your wet ingredients. Scrape out the sweet potato from the skin & add to the blender. In a mixing bowl, pour out the wet mixture & add in all the dry ingredients. Fold everything in together. Make sure there aren’t any lumps. Heat up your waffle iron (I use my mini waffle iron from @unprocessyourfood). Spray it with some olive oil. Scoop out the mixture & cook it in the iron accordingly. Top waffles with pecans & walnuts (@natureseats), maple syrup, & powdered sugar 😋 {Recipe video tutorial in story highlights}

Then add in the remaining ingredients. Set aside. Cinnamon Filling: Mix together all the ingredients in a bowl & set aside. Icing: Mix together all the ingredients in a bowl & set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat oven to 350°. Lay down some more flour & knead your dough. It will be sticky so make sure to continuously add flour when needed. Roll out evenly into a rectangular shape. Then spread the cinnamon filling evenly. Start to roll up the dough into a log. I found that use a flat object, such as a cutting board, helps to lift up the edges as you go. Definitely wasn’t perfect or even but oh well 😬 Once rolled up, use a knife to cut into slices. Then place into 2 round baking dishes (I used my cast iron skillet & a pie dish). Bake in the oven for 35 mins. Once cooked, let it cool before pouring on the icing. At least I’m starting off my morning with my favorite breakfast 😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What’s in my bowl 🥣👇🏼 ▫️1/2 cup Quick Oats (@bobsredmill) ▫️1 cup Unsweetened Almond Milk (@lovemysilk) ▫️1 tsp Light Brown Sugar ▫️1/2 tbsp Maple Syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Combine all ingredients together in a microwave safe dish. Microwave for 1 1/2 mins - 2 mins. Top with banana slices, almond butter (@maranathanutbutters), sliced almonds (@natureseats), cacao nibs, toasted coconut, & hemp seeds (@manitobaharvest)👌🏼

It sure was a lot but the end result was just...🤤👌🏼 Never need to go out & buy gyros again 👀 Did you survive the first official Monday after the holidays⁉️ I barely did... ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What you’ll need👇🏼 ▫️Whole Wheat Pita Bread ▫️Tzatziki Sauce {deets below} ▫️Hummus {deets below} ▫️Eggplant Falafels {deets below} ▫️Radish, sliced ▫️Cherry Tomatoes, halved ▫️Onion, sliced ▫️Cilantro ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tzatziki Sauce: ▫️1/2 Cucumber ▫️10 oz Greek Yogurt (@siggisdairy) ▫️1/2 Lemon Juiced ▫️1 clove Garlic ▫️1 tbsp Avocado Oil (@heb) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Hummus: ▫️1 can Chickpeas ▫️Lemon Zest ▫️1/2 Lemon, juiced ▫️1 tbsp Sesame Oil (@kikkomanusa) ▫️2 tbsp Water ▫️Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Eggplant Falafels: ▫️Eggplant, sliced ▫️Panko Breadcrumbs (@progresso) ▫️1/2 cup Whole Wheat Flour ▫️1 tbsp Cumin & Chili Powder ▫️1/2 cup + 2 tbsp Water ▫️Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tzatziki Sauce: Grate the cucumber, sprinkle salt, & drain excess water. In a food processor, add in all the remaining ingredients. Pulse to mix together. Add the cucumber back in & use a spoon to mix. Set aside in a bowl. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Hummus: Pulse together all ingredients in a food processor. Add in the oil & water while pulsing the chickpeas. Set aside in a bowl. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Eggplant Falafels: Slice the eggplant, sprinkle salt on both sides, & drain excess water. In a bowl, mix together flour, cumin, chili powder, & water- this makes the batter. In a plate, lay out the breadcrumbs. One by one, dip the slices in the batter, then coat each side evenly in breadcrumbs. Place into the air fryer (don’t overlap the slices, may need to do two batches). Cook at 400° for 10 mins. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Build up your gyro wraps with all the ingredients!🤤 {Recipe video tutorial in story highlights}

  • 🍳 Zucchini Noodle Egg Nests ⏲ Under 10 mins | Serves 1 Beautiful Saturday down here in Houston today ☀️ Not sure why it took me so long to try out the new veggie noodle egg nests breakfast trend (mouthful), but boy I’m glad I made some today!😍 Hope you all have a wonderful weekend & get some Vitamin D 🏃🏽‍♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What’s on my plate🍴 ▫️1 Spiralized Zucchini (@cecesveggieco) ▫️2 Cage-Free Brown Eggs (@vitalfarms) ▫️1/2 Avocado ▫️Seasonings- Garlic Powder, Chili Powder, Red Crushed Pepper, Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cook the zucchini noodles in a pan for roughly 2 mins. Make sure to dump out any excess water. Then add in all the seasonings except the red crushed pepper. Cook for another 2-3 minutes & then separate into two little “nests”. Crack in an egg into each nest. Cover for a little to let the egg whites set. Serve with a some sliced avocado.   • 🥘 Butternut Squash Soup ⏲ 10 min Prep Time | Serves 6-8 It’s FRI-YAY! 🤩 Wishing I had some butternut squash in my fridge right now so I could make this delicious soup for dinner...😪 Don’t mind me, I’ll just be here...dreaming about this cozy bowl of soup 🍲 If you haven’t tried this recipe yet, it’s a must have!👌🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets👇🏼 ▫️1/2 medium Butternut Squash ▫️1/2 small Sweet Potato ▫️1 Carrot ▫️1/4 Onion ▫️1 Celery Stalk ▫️4 cloves Garlic ▫️1 tbsp Avocado Oil ▫️3 cup Vegetable Broth ▫️1 cup Water Seasonings- ▫️1 tsp Chili Powder, Cumin, Ginger, Onion Powder, Pepper ▫️1/2 tsp Smoked Paprika ▫️2 tsp Salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Roughly chop all of your veggies (I didn’t peel the skin off of the squash or SPs). In a pot, add in all your ingredients. Cook covered on low-medium heat for 25 mins. Then, carefully🚨, transfer to a countertop blender (or use an immersion blender) & blend until smooth & silky 😋.
