. Don’t let the simplicity fool you, here we took lamb sirloin and dry aged it until we smelled a cheesy funk that reminded me of mozzarella di bufala. We built hibiscus & chili flavors each step of the way - brine, rub, and a’jus. The hibiscus chili rub consists of ONLY 25 ingredients 🤭... 8 types of chili, 5types of peppercorns & hibiscus that we blistered then rehydrated in our pressure cooker to extract maximum flavor. @copperpennync my worst nightmare was realized. Fortunately, it was not food related 🙂. The foreboding dark cloud of football agony began as I heard cheers coming from within during the climax of the Texans/Eagles game - which could only mean at this time I was going to be surrounded by dozens of drunken cheering Eagles fans rooting for the demise of my Texans. What timing! While we waited for our Hot Roasted Pork Sandwich, I listened to the patrons calling JJ Watt a baby and Watson a fraud. It obviously wouldn’t bode well as we obviously proceeded to remove ourselves from the playoffs promptly. I had to go outside for a breather....anyway...back to food. I thought the sandwich was actually quite great even though handcrafted by the day’s treacherous philly fans. I couldn’t tell where the provolone cheese started and the garlic aioli ended (you can see the sandwich took it on the chin) but I am kinda a mayo junkie so whatever 🤷♂️. Good things going on there, especially with Au Jus sidekicking it for every bite. Who doesn’t like golden crispy #hushpuppies with their accompaniment to seafood? In fact I propose this be alongside any meal - from bbq 🍖to burgers 🍔to blinis🥞. At Something Fishy in Wilmington for 147 we swooped in to hook and reel delicious NE clam chowder and a couple dozen freshly fried hushpuppers before continuing our east coast food tour. We ended up using the chowder as a staging ground for profound hushpuppy dunking, enjoying this virtuous snack on the road. This my friends is a #meatloafsandwich , christened the Mutha Heffer, @ Sweet and Savory Cafe within Wilmington, NC. So what’s going on here exactly? Did you not bother to provide a shot with the contents? No, you can use your imagination as I describe the perfection that was the loafed meat, pressed gently up against candied bacon that would be candystore sweet if eaten alone, smothered with dijonnaise that should require zero explanation, coupled with onion rings that continue an avenue of texture, *sweet*, and *savory* and finished with arugula cause green pastures gotta be somewhere for the Heffer after all. If you look reallll close at the TV in the back you can see the Texans just starting to lose to the Eagles. For one to live a #tripledlife one must adapt to the rules of the road, the operating hours of bustling #dinersdriveinsanddives spots, the haphazard closures on Sundays and Mondays and the impromptu “holiday hours” that shut us out from numerous additional encounters. Though I do feel that a dining experience is indeed a part of the restaurant’s experience, listening attentively to a waiter or waitress and their menu anecdotes or the banter from the kitchen staff, at the end of the day we are on a mission. A mission to taste, and embrace, the culture and wonder of every square mile of this damned amazing country we call the United States. Anyway, at Cast Iron Kitchen in Wilmington, we went for the dirty south. #chickenbiscuit - smothered west and east with a rich and ever-present sausage gravy.
